Dark-fruited and perfumed, Stag's Leap Wine Cellars Fay Vineyard Cabernet Sauvignon 2021 layers blackcurrant, boysenberry and purple raspberry with hints of violet, cedar, mocha and sweet spice. The palate is concentrated yet lifted by juicy acidity, with firm but refined tannins and a long, chalk-tinged finish that shows the vintage’s savory, energetic edge.
Grilled rosemary lamb chops; Dry-aged ribeye with peppercorn sauce; Wild mushroom and herb risotto
FAY Vineyard Cabernet Sauvignon is one of Stag’s Leap Wine Cellars’ flagship estate wines from the historic FAY Vineyard in Napa Valley’s Stags Leap District, the first Cabernet Sauvignon planting in that area and purchased by the winery in 1986. Typically crafted as (nearly) 100% Cabernet Sauvignon and aged in 100% new French oak, it is known for its supple red and black berry fruit, floral perfume, and silky, fine-grained tannins that showcase the vineyard’s elegance in contrast to the more powerful S.L.V. bottling.
