Dark, heady and yet remarkably poised, Domaine du Pegau Châteauneuf-du-Pape Cuvée Da Capo 2007 layers blackcurrant and blackberry liqueur with wild herbs, cured meat, spice and cocoa, all wrapped in silken tannins. The palate feels enormous but controlled, with a deep, savory core and a finish that just keeps pulsing with sweet fruit, spice and warm earth—an especially complete and harmonious expression of this legendary vintage.
Slow-braised lamb shanks with rosemary and garlic; Dry-aged ribeye with peppercorn jus; Daube de boeuf Provençale
Châteauneuf-du-Pape Cuvée Da Capo from Domaine du Pegau is the estate’s ultra-rare flagship red, produced only in top vintages from very low-yielding, century-old vines across La Crau and other prime parcels. A traditional field blend dominated by Grenache with Syrah, Mourvèdre and other permitted varieties, it is vinified with whole clusters and aged for two years in large old foudres, yielding a massively concentrated yet seamless wine famed for its dark fruit, garrigue, spice and remarkable longevity.
