Les Roises Extra Brut is Ulysse Collin’s single‑parcel Blanc de Blancs from a 0.62‑ha monopole of old Chardonnay vines in Congy, planted on soft clay, silex and limestone with full southern exposure. Vinified with native yeasts in mostly-used oak, matured long on the lees and finished at very low Extra Brut dosage, it shows a rich, almost waxy/unctuous texture framed by bright citrus and orchard fruit, delicate brioche and hazelnut notes, and a striking saline‑chalk minerality that reflects its terroir.
