Dark fruit in M. Chapoutier’s 2020 Ermitage Le Pavillon feels almost bottomless—blackberry, cassis and plum wrapped in cool stone, graphite and a touch of soy and espresso—yet the wine glides with surprising freshness and poise. The palate is dense and finely woven rather than heavy, with saline lift, peppery nuance and wonderfully silky but powerful tannins that promise a long, complex evolution. A great, commanding Hermitage that somehow remains inviting and effortless to drink.
Côte de boeuf with bone marrow; Roasted lamb shoulder with garlic and rosemary; Wild mushroom and truffle ragù

Ermitage Le Pavillon by M. Chapoutier is a legendary, single‑parcel Syrah from ancient (around 90–100‑year‑old) biodynamically farmed vines on the granite slopes of the Les Bessards lieu‑dit on Hermitage Hill, in France’s northern Rhône. Typically massively concentrated yet finely balanced, it shows deep garnet color and layered notes of dark berries, smoke, licorice, tobacco, cocoa and mineral tones, built for extremely long aging that can stretch for many decades.
