Les Griffons de Pichon Baron 2021 shows a cool, refined Pauillac profile, with vivid blackcurrant and blue fruits edged by violets, graphite and a touch of spice and cocoa. Medium-bodied and taut rather than plush, it glides on sleek tannins, finishing fresh, juicy and precise, promising added complexity with a few years in bottle. This is a focused, elegant expression of the vintage rather than a powerhouse, but it’s very classy and well judged.
