Chateau Ausone 2023 is a vividly sculpted, Cabernet Franc–driven Saint-Émilion, unfolding with intense dark berry and cherry fruit wrapped in violet, smoke and spice, all carried by a vibrant, mineral core. The palate is at once pure and concentrated, with muscular yet velvety tannins and a seamless, long finish that marries depth and finesse in striking fashion.
Roast saddle of lamb with rosemary and garlic; pigeon or squab with truffle jus; dry-aged ribeye steak; cep mushroom risotto; duck breast with blackberry reduction.

Dominated by old Cabernet Franc and Merlot vines, it yields very small quantities of intensely mineral, perfumed and long-lived wine that combine power, finesse, and remarkable freshness, overseen today by the Vauthier family.
