Paolo Scavino’s 2020 Barolo Rocche di Castiglione is strikingly pure and perfumed, layering red cherry and wild berries with hints of blood orange, spice and a stony, earthy undertone. On the palate it is silken but tightly coiled, with fine, precise tannins, vibrant acidity and a long, savory finish where subtle dried apricot and sweet spice linger. A poised, high-definition Barolo that reflects the site with clarity and should gain in complexity with time in bottle.
Porcini mushroom risotto; Braised veal shank (ossobuco); Roasted duck with cherry glaze
