Nebbiolo from the Fossati cru shows its elegant side here, with the Giacomo Borgogno & Figli Barolo Fossati 2016 layering ripe plum and sweet red cherry fruit over hints of citrus zest, spice and polished oak. The palate is medium to full in body, with fine, woven tannins and a long, savory finish that already drinks beautifully but clearly has more nuance to reveal with time. A refined, open-knit expression of the excellent 2016 vintage, generous without losing its classic Barolo grip.
Tajarin with white truffle; Braised veal shank (ossobuco); Aged Parmigiano-Reggiano
