Chavy‑Chouet’s Puligny‑Montrachet “Les Enseignères” is a village‑level Chardonnay from one of Puligny’s most prized climats just beneath the Grand Crus, grown on clay‑limestone soils from long‑established (c.60–65y) vines. Under Romaric Chavy the wine is typically fermented with native yeasts and aged about 12 months in oak (roughly 20% new), producing a precise, mineral and saline Puligny with floral and stone‑fruit notes, bright acidity and good mid‑term ageing potential.
