From the first pour, this Pinot Noir–driven Champagne feels generous and vivid, with Cedric Bouchard Roses de Jeanne Cote de Val Vilaine Blanc de Noirs layering ripe pear, stone fruit and hints of red berry over warm pastry notes. The mousse is creamy yet energized by cutting acidity, giving a mouthfilling, almost vinous texture that still finishes with a precise, mouthwatering snap. It’s both immediately charming and clearly built to gain complexity with some patience in the cellar.
