Using the traditional appassimento method, the best hand-harvested bunches are dried for several months to concentrate sugars and flavors, then fermented and aged extensively in oak and bottle to yield a powerful yet finely balanced wine, with deep dark-fruit intensity, spicy, earthy complexity, and notable longevity.…
