Per Se is a tiny, terroir-obsessed project in the Monasterio sector of Gualtallary in Mendoza’s Uco Valley, founded in 2012 by renowned Argentine winemakers David Bonomi and Edgardo “Edy” del Pópolo, now joined by Edy’s son Santiago. Working at 1,400–1,500 meters on just over 4 hectares of organically farmed (uncertified) vines, they cultivate some of the Uco Valley’s poorest, whitest calcareous soils, rich in chalk and decomposed granite, to produce what they describe as “mountain wines.” The vineyards are broken…
